Brioche Burger Buns

Exposed to another level by making burger buns


Brioche Burger Buns

What you need:

120ml lukewarm milk
5g/ 1/2 tbsp instant yeast
300g bread flour
20g sugar
1/2 tsp sea salt
1 whole egg
30g unsalted butter
some sesame seeds

Method: (I am using Thermomix)
1) milk, yeast, sugar, and egg, 1 min 37c sp 2
2) add in the bread flour and salt, knead for 2 mins
3) add in the butter and knead for another 2 mins
4) Proof for 1hr and divide in 8 pcs and form a ball
5) then rest for another 1 hr, egg wash and sprinkle some sesame seed
6) bake at preheated oven at 170c for 12 mins

 Here is another recipe I had to try and it is a keeper too.


Simple White Sandwich Bread

What you need:
Ingredients:
357g Japanese Flour
210ml Warm water
1 tsp instant yeast
1 tsp salt
42.6g butter
1 tbsp sugar or honey

Method : (I am using Thermomix)
1) Warm water, yeast, sugar, 1min, 37c for sp2
2) Add in Flour and salt, knead for 2 mins
2) Add in the butter and knead for another 2 mins
3) Cover with cling wrap and proof for 1 hr
4) Roll the bread and shape it and proof until double size
5) Bake at preheated oven 170c for 30 - 40 mins

QQ Mee Hun Kueh

QQ Mee hun kueh ever 



Homemade Mee Hun Kueh
What you need:
500g plain flour
200g water
A bit of salt
30g onion oil
1 egg

Method:
Put everything inside TM bowl and knead for 2 mins. Cover and leave it room temperature



I used the leftover dough to make my own noodles too.






Sandwich toast bread

I had tried this recipe once during MCO 1.0. Since MCO never ends I tried this recipe for the 2nd time in MCO 3.0.

What you need:-

Sponge dough
220g Bread Flour (I used Japanese Bread Flour)
70g Whipping cream
60g milk
1 egg
1 tsp yeast powder

Main dough
50g Bread Flour (I used Japanese Bread Flour)
15g water
30g sugar (I used molasses sugar)
1/2 tsp salt
20g Butter

Method :
1)Put sponge dough ingredients in TM bowl, knead for 2 mins, Cling wrap and keep in the fridge for 2 to 3 hrs or room temp for 1 hr
2) Tear the sponge dough into chunks, together with the main dough ingredients except for butter and salt. Knead for 2 mins
3) Add in butter and salt, knead for another 2 mins
4) Rest in TM bowl for 20 mins
5) Divide into 3 smaller dough and rest for 10 mins
6) Roll it flat and fold it into 3 swiss rolls and put in a loaf tin to proof until double size. Bake at 170c for 30 to 40mins. Small bread bake for 15 to 20 mins

What you need:
Bread dough
205g Bread Flour
50g Cake Flour
30g Sugar
2g Salt
3g Instant Yeast
45g Butter
25g egg
125ml Milk
20g Whipping Cream

Cookies dough
110g Cake Flour
50g Icing Sugar
50g Butter (Cold)
10g Milk Powder
3g Baking Power
2g Baking Soda
1 Egg yolk

Method: Bread Dough
1) Put everything in except butter, knead 3 mins/dough
2) Add in butter, knead 3 mins/dough
3) Rest the dough, proofing for 1 hr or double in size
4) Divided into 10 portions

Method : Cookies Dough
1) Put everything in, mix at turbo/2 sec x 2 times. Then turn 10 sec/sp6
2) Cover with cling wrap, rest for at least 30 mins in the fridge
3) Divided 10 portions. Put ontop of the bread dough, make it cover all. Make several cross ontop
4) Rest for 1 hour
5) Brush the top with egg wash right before baking
6) Preheat oven 150c for 18 mins or until the bread turns golden brown (I used air fryer oven)

Cinnamon Rolls

Hubby asked whether I know how to make Cinnamon Bread? I told him I never eat before also :)
Bought a bottle of cinnamon came back and start doing it. Below is the recipe from YouTube I searched and decided to give it a try. 



Cinnamon Rolls

What you need:
130g Warm Milk
4g Dry Yeast

300g Bread Flour
20g Sugar
5g Salt
45g Melted unsalted butter

Mix
50g Unsalted butter
70g Brown Sugar
4g Cinnamon Powder
Cream cheese frosting (100g cream cheese + 20g powdered sugar + 3g vanilla extract + 5g Lemon juice + 20g milk)

I baked at 150c for 20mins using my Air Fryer Oven

(I didn't try the cheese frosting because I am lazy to do that)

Pure Butter Cake

 I had failed so many times in making butter cake and this recipe is definitely a keeper.




Pure Butter Cake

What you need:













250g butter
200g sugar
5 eggs
230g cake flour
1/2 tsp baking powder
50g milk
1tsp vanilla extract

Method : 
(preheat the oven at 150c)
1) Mix the butter and sugar until dissolved (around 15 mins if you are using castor sugar), beat further until pale in white and light. 
2) Add in the eggs, one by one
3) Add in the flour spoon by spoon.
4) Add in the milk and vanilla extract. Continue to mix for another 3 to 5 mins
5) Pour in the batter and bake at 150c for 60mins, 160c for 10mins






I had done so many times without fail.
