Baked Hasselback Potatoes

I have been seeing hasselback potatoes online for a while now and have been waiting to try baking them. I never thought its was so easy to make them until I tried it out. Basically they are just like french fries but this was thin slices in the middle of the potato and stuffed with bacon and cheese or other ingredients.

I'm not a fan of potatoes but this really made me fall in love with it. My boys loved it so much especially my eldest son. He really can eat the whole potato. I am happy to see him enjoying them.

Baked Hasselback Potatoes
Recipe source from : Fiona Low (inspired by BAF recipe's book)

What you need:-
-2 American Potatoes
-6 slices of bacon
-2 spoonful butter
-black pepper (to taste)
-olive oil
-1 tsp homemade garlic powder
-Parmesan cheese (as per liking)
-Spring onion (chopped)

Method:-
1) Wash the potatoes and place them on the cutting board with the flat sides down. Place a chopstick underneath the potato to prevent breaking. Each cuts should be about 0.5 cm apart. (I did not measure)
2) Slice the bacon into pieces.
3) Place the potatoes on the baking pan. Stuff the sliced bacon in-between the sliced gaps of each potatoes. Season with olive oil and black pepper.
4) Brush it with butter and sprinkle with parsley
5) Put the baking pan into the BAF. Place it on top of the low rack. Select "Bake" mode and set the timer. Bake for 35 minutes or until the potatoes turned crispy outside and fluffy inside. (I used 45 minutes)
6) Sprinkle with spring onion and Parmesan cheese on top. And it is done!

This was my second attempt. First was without the bacon yet it still tastes nice. But I prefer it with bacon. I will put more in future! (>‿◠)✌
Thanks to my mum too, who bought this AF back when I proposed (^◡^ )

Lovely snack for tea time yet healthy and delicious. The most important thing is my boys love it so much.

I never thought it was so delicious which I can make it at anytime, any day. I hope you and your family love it as much as we do...
