Steamed Egg Sponge Cake/ 鸡蛋糕


This was the old fashioned type of chinese steamed sponge cake. I love to eat 鸡蛋糕 when I was young. You just need a few ingredients to make this. It is expensive to buy it at wet market. So I thought why not I steam it myself for my boys to eat. 


The trick here is to make the sponge cake fluffy, you need to really beat the egg until it changes to light colour then only you fold in the cake. Fold in.. not mix it. It is different ya. 


I always thought steamed egg sponge cake is super easy and then I tried to make it for the first time, wahlaueh it is so dense and not springy. The texture was hard after cooling down. I wonder where did I go wrong ya????... 


That was until I found a recipe shared by TM website. I used this recipe to make my steamed egg sponge cake. The recipe requires baking but I steamed it instead. The outcome was very successful just like  鸡蛋糕!


I was so happy with the end product so I kept the recipe for my future use. I had evolve this recipe into a few flavour. Just by modifying and add it to my own preference. I am sharing now the original recipe.

Steamed Egg Sponge Cake/鸡蛋糕

What you need:-
- 5 eggs
- 200g fine sugar (I used 180g organic cane sugar)
- 1/4 tsp salt
- 180g plain flour (I used self-raising flour~sieved)
- 40g oil (I used olive oil)
- 1 tsp baking powder (I omit since I am using SRF)

Method:-
1) Insert butterfly, place the eggs, sugar and salt into TM bowl to beat 4 mins, speed 3
2) Add in the flour and oil to mix well 20 sec, speed 3
3) Pour the cake mixture into muffin cup.
4) Fill water in the TM bowl to boil, 5 mins later, stack up Varoma unit to steam. 15 mins/V/Speed 2


I seldom use my Varoma stack for steaming but this time I would like to try it out and I am very satisfied with the outcome.


 My baby egg sponge cake are beautifully pop up. They look beautiful!


Can you see the fluffy texture? They are really spongy...and I can smell the egg aroma. It made me hungry when I was typing this post... yummy!


The boys were fighting for this cake at home and it was finished on the day itself and I made another batch for them. This time I added cocoa powder to make zebra pattern. I did not take any picture of the zebra pattern but I promise I will put it in the blog once I make again.

Note : You can hand whisk it by using the electrical hand mixer until you get the light colour and fold in the flour and the oil.
